Wash potatoes and rub with olive oil.

Place potatoes on baking sheet in single layer.

Bake potatoes on 400° for 30 minutes.

Remove from oven and cut in half.

Scoop out the potato flesh.

Reserve flesh for another potato use.

Place the potato skins hollow side down on baking sheet.

Return to oven and bake 10 minutes.

Turn potato skin over and bake another 10 minutes.

Fill the potato skins with the cheddar cheese and top with bacon crumbles.

Put potato skins back into the oven for 3 minutes or until cheese melts.

Top the potato skins with a dollop of sour cream and sprinkle with fresh chives.
